Shopping Gluten-Free

By: Gretchen Scalpi

According to Gluten-Free Foods in the U.S., 5th Edition by Packaged Facts “Over the five-year period ended in 2014, sales of gluten-free products in traditionally grain-based categories posted a compound annual growth rate of 34%.”

There are more gluten-free products in the grocery store than ever but many of those are packaged foods that may not include healthy ingredients. Other options are gluten-free grains, fruits and vegetables. It’s all so confusing so how do you choose? Follow the tips below and you’ll be well on your way to purchasing and eating a healthier gluten-free diet.

*Start by going through your kitchen and your refrigerator. Read labels and keep what you can and get rid of the rest.

*Carry a list of safe foods and foods to avoid every time you shop. Plan ahead and create a list of food you do want to purchase.

super hero birthday 5*Load up on fresh fruit and vegetables. Buy in season selections to save money and use them in recipes or eat them whole.

*Stay away from processed food and be prepared to do more cooking at home.

*Check the labels on everything before you purchase with the exception of fresh produce.

*Purchase gluten-free grains including quinoa, rice and rice flour, corn, buckwheat, millet and teff.

*Meat and seafood products without marinades are gluten-free such as beef, chicken, turkey, fish and shellfish.

*Dairy products including yogurt, cottage cheese, cream, milk and butter are a safe choice.

*Miscellaneous foods to round out your diet include honey, oils, hummus, seeds and seed butters and nuts and nut butters.

*Purchase drinks like bottled water, hot cocoa, coffee, tea, fruit juices and carbonated drinks after checking the labels to make sure they are gluten-free.

*Canned and plain frozen vegetables and fruit are a good choice. Check the labels on any items with sauces.

*Purchase separate containers of peanut butter, jams and jellies for yourself to avoid cross contamination.

*If you have a smart phone try looking for a phone app that can scan bar codes of packaged foods. This makes it easier to determine if the item you want to purchase is gluten free.

*Try shopping at ethnic markets and health food stores to give yourself some more options and to vary your diet.

*Purchase bulk items such as gluten-free flour, baking mixes and other staples online in order to save money.

To learn the intricacies of the gluten free diet, it’s a good idea to make an appointment with a Registered Dietitian who has experience working with this challenging diet.

Baking Tips – 5 Lessons Learned In Mom’s Kitchen

beatles birthday1. Good baking requires patience. If you try to rush it, you will end up with a mess. A good cake, pie, cookie, the list goes on and on, cannot be rushed. Things tend to turn out half-baked (yes, literally) or so badly that they are not edible. People tend to frown at you when serve them burnt cookies. (Hey, at least I tried.)

2. You do not have to always follow the recipe. I have started to learn to cook and bake by feel and taste more than by following a recipe. If you do not like one thing that is in the recipe but you do like everything else that is in it, take out the thing you do not like. I tend to add more of things I like into a recipe (chocolate) and take out things I don’t (not chocolate). I have been known to add double the amount of chocolate chips to a cookie recipe and omit the nuts entirely. (Really, who needs all those nuts getting in the way of a good chocolate chip cookie!)

3. The devil is in the details. Little things like adding ingredients in the proper order can make all the difference. I have learned from very painful experience that putting the ingredients in the wrong way can easily ruin a baking recipe. The baking powder has to go in before you put it in the oven. (Who knew?)

4. It does not have to be complicated to taste good. Some of the best baking recipes that my mom ever made were ones that had five ingredients or less. If you are like me and do not have the patience to squeeze a million tiny dots onto a cake in order to make pretty frosting, it is nice to know that I can make something that is simpler and still tastes good. (Anyone have a recipe for dipable (yes, I just made up that word) frosting? Lets skip that whole thing of having to frost the cake entirely.)

5. Always mix in some love. I am convinced that this is why store bought sweets never taste as good as homemade ones. Machines do not know how to inject this special ingredient. All baking recipes at the very minimum need at least one cup of love to be any good at all.

I wish you all happy baking with lots of love baked in!

Birthday Cakes – Why They Are Important and Always Will Be

panther birthday cakeBy: Jade Reilly

Birthday cakes are one of the most important things of interest in any birthday celebration. A birthday party with no tasty birthday cake will not make that event complete. Regardless of whether or not you are an adult or a kid, you would always be happy to have a cake around. Children are always full of life when they see cakes around and the more unique your cake is, the more your party becomes unique. Birthday cakes are usually of different types, depending on the ingredients used. People of different ages also have different tastes for them. For instance, kids usually like chocolate flavored cakes. The decorations and icing are always unique and striking and many mothers have always been very creative with the preparation of birthday cakes for their children. In the case of teenagers, they are a bit more mature and are not likely to go for a birthday cake with cartoon characters. Therefore, they like cakes which are simple in designs or cakes with styles such as bikes, cars, teen stars, chocolate bar, baseball, cakes, and so on. Cakes are very important because of the following reasons:

A birthday party is not complete without birthday cakes. Organizing a birthday is an opportunity to show love for one another, either to a kid or an adult. An ordinary menu with cake is sufficient to make you have an ideal birthday party. It’s not necessary to spend much before people would know you have had a nice birthday party. Birthday cakes make the day complete.
People love chocolate cakes and cakes containing chocolate is one of the most important things for any birthday party. Chocolate also symbolizes a lot of things like joy, love and bond between lovers. Therefore, birthday cakes are making people express love to one another.
Birthday cakes are also good in making people still hang around after most of the events of a birthday party. In most cases, after eating, singing and playing, cakes are used in keeping the environment lively instead of having an environment which is boring.
Cakes are usually associated with sweetness, especially among children. Kids love sweet things and that is why they always see a birthday or any special event as the time to enjoy. For your birthday cake, you could choose chocolate cake. Children and adult would love that. You could also prepare cake that is not too sweet in case of adult guests who are not too interested in sweet things or who are diabetic. Having this combination ensures that everyone has a nice time at your birthday party. There are ways you could prepare good cakes which everyone would love. Adults like themes like a diary, a champagne bottle, or things which depict a favorite sports character. Therefore, cakes for adults do not need to be that vibrant. You may just have something simple with the name and good wishes of the person written on it. In the case of cakes for kids, you should consider what kids generally like. In the case of birthday parties for children, you could have designs showing baby blocks, puppies, teddy bears, blue skies, flowers, yellow ducks and the like.
